I also wonder how they get around their systems spraying chemicals above unprotected cooking surfaces at various times of the day and night? They claim the grease filters protect the equipment but we all know air, grease, and chemical can pass both ways through a grease filter system. I have personally seed the chemicals dripping down out of the filters and hood.
The first set of pictures below is from a large fast food chain with many of the systems in place. Reports state grease buildup less than 50 microns (less than the wide of a single human hair). We see different. Also, note none of then systems appear to been properly functioning for quite some time but all of these were recently "inspected" by the autocleaning company with full reports stating everything was functioning to specifications and no grease in the system was in excess of 50 microns.



We see where the nozzles are only cleaning a small area. Not to the NFPA96 standard of 50 microns (Less than the width of a human hair) as stated on the report given to customer.

Next we visit a burger place. Note scrape marks where cleanings were done and line where the attempted cleanings stopped to try to both fool the inspector and also claiming in the reports left with the customer that areas "measured" were less than 50 microns of grease buildup (Again, less that the width of a human hair). We see looking up the hood the scrape marks where cleanings stopped looking up and the grease was "measured" at this point to attempt to state system was performing perfectly and the system was still clean to NFPA96 standards. Obviously it was not. We also see behind the filter rails that the spraying system fails to clean. That is the area closest to the hot equipment.

Last we see a wok style system with vast areas that are not being kept clean. These pictures were taken only 6 weeks and 3 months after the systems was perfectly cleaned by a certified company with clear pictures of these same areas with no buildup. Note the upper and lower filter rails are a major fire hazard as is the ductwork. Of course we can only assume the report by the auto-cleaning company states otherwise.
And we now look at the filter trough where we clearly see how poorly this autocleaning system fails. WOW!!
The question we all ask is this. Was any of these areas Fire Safe and clean to the National Standards????????
