George will be covering history of restaurant systems, hood general requirements per NFPA
96/17A, etc., general service of systems. See attachment for more details.
1200-1300 Lunch on own
1300-1600 Don Pfleiderer, President of Enviromatic, he will focus on hood maintenance, cleaning,
exhaust and more detailed information on hood design and construction
